Level 2 Professional Catering and Hospitality

Course Description

This is a professional course that will further develop your existing skills to a high commercial standard in cookery practice. The course is well regarded by employers and prepares you for a successful career in the catering industry. The course can be combined with the PTA (Pathways to Apprenticeship) programme which is designed to help students fast-track to a Level 3 Workbased Catering Apprenticeship. (PTA candidates must meet additional entry requirements). Alternatively the course can be studied alongside a Welsh Baccalaureate programme. You complete 14 core units: Investigate the catering and hospitality industry Food safety and catering Health and safety in catering and hospitality Healthier foods and special diets Kitchen operations, costs and menu planning Applying workplace skills Prepare and cook, stocks, soups and sauces Prepare and cook fruit and vegetables Prepare and cook meat and offal Prepare and cook poultry Prepare and cook fish and shellfish Cook rice, pasta, grains and egg dishes Prepare and cook desserts and puddings Produce paste products Produce biscuits, cak and sponge products Produce fermented dough products Professional cookery - craft assessment Level 2 Barista Skills

Career outcomes

Candidates who achieve at least a merit profile at Level 2 should consider extending their skills by progressing to the Professional Chef Diploma or Certificate at Level 3 (Course codes F1213 & F6922). These Level 3 courses are available full-time and part-time. PTA candidates in suitable employment should also consider continuing their training in the workplace via Professional Cookery Workbased Diploma Level 3. Once qualified to level 2 most learners choose to gain industry experience / employment alongside their studies at Level 3. There are good employment opportunities locally and further afield as there is a shortage of skilled chefs qualified to level 2 at present.
