National Certificate in Baking

Course Description

Learn the art of craft bread baking and the gain essential skills required to work in a commercial or boutique bakery. The National Certificate in Baking is recognised and well respected throughout New Zealand; you will study a range of compulsory and elective courses with a focus on craft bread baking. Compulsory courses include health and safety, food safety, legislative and food code requirements, bakery science and personal presentation. Elective courses include biscuits, pastry, cake, bakery decoration and bread making. The National Certificate in Baking Level 2 is incorporated into the delivery of the Level 3 National Certificate. To complete this programme successfully you must be physically able to work in a busy bakery environment.
