Diploma in Professional Cookery Level 5

Course Description

As the foundation block for this diploma, learners will be offered an introduction to classical cookery methods, introductory and advanced food safety, knife skills and an introduction to menu design concepts. Learners then get the opportunity to apply their knowledge within a commercial kitchen environment creating classical stocks, soup and egg dishes. The principles and disciplines instilled within this block create the foundations for a successful career in culinary arts.

Career outcomes

Graduates will be able to demonstrate the skills and knowledge required of chefs who are involved in complex cooking in a commercial kitchen. Graduates will gain a detailed understanding of culinary arts and a through awareness of contemporary culinary trends. Graduates will have a solid base from which to further develop their investigative and presentation skills of cuisine, including menu and kitchen design, within the Hospitality industry. Graduates may enter directly into the workforce or consider further study at a degree level in hospitality or culinary arts.
