Course Description

The Culinary Arts degree provides a pathway for creative employment opportunities within all aspects of the food industry. This is a programme that reflects developments in both national and international Culinary Arts education. It combines practical reflective classes in kitchens and restaurants with an in depth theoretical knowledge-base and the development of communication, critical thinking, problem solving and personal skills in its participants. This degree programme reflects the strong partnership between education, the individual student and the hospitality and food industries. This programme also provides students with a knowledge and understanding of kitchen technologies, the business aspects of culinary operations and the science and nutrition of food. Advanced culinary technical studies, combined with a wide range of learning opportunities, designed to develop the students’ innovative and artistic and managerial capabilities, are core elements of the programme. Participants will also be introduced to the world of food photography and food styling and entrepreneurship. Other key features of the degree are the study of food product development and gastronomy which provides the context for the development and application of highly complex and artistic competencies.
